Ma Yuxing bucket chicken originated in the third year of Tongzhi Period, Qing Dynasty (AD. 1864) by Ma Yongling at the southeast side of the Drum Tower. Bucket Chicken is one of the main dishes in their business.
Being round, soft and yellow, Ma Yuxing bucket chicken tastes salty, fragrant, tender, and crisp with a bit lotus smell. It is a kind of roast chicken and a must in banquets of Kaifeng. There were many stores in Dongjing ( Kaifeng) in the Northern Song Dynasty, they had to compete with each other thus their processing technique was improved to a high level.
