Lotus Seeds in Rock Sugar Syrup


The dish is famous in the Xiang River Basin and the Dongting Lake. Before cooking, put the lotus seeds in cold water and soak for over 10 hours; remove the lotus plumule; put the treated lotus seeds in a bowel, and add some water to the bowl and put the bowl in the steamer until the lotus seeds are done. At the same time, clean the longan pulp with warm water; peel a fresh pineapple and cut it into 1cm cubes. Pour about 500g water in the pan; add rock sugar and heat the pan; filter the liquid when all sugar dissolve; again put the filtered liquid in the pan and add steamed lotus seeds, and longan pulp, pineapple cubes, green beans and cherries. When lotus seeds float, pour all in a bowel. The dish is colorful. The lotus seeds taste glutinous, sweet and refreshing.
