One day, Mao Zedong's chef served a Hunan dish "Anyone Chicken". But Chairman Mao did not eat the dish and returned it to the chef, and said "Anyone Chicken" is the dish for landowners and rich men, and the dish for him should be "Long-March Chicken". During the Long March of the Red Army, soldiers rarely had the chance to eat chicken, fish or meat. Even when they have the chance to have them, these dishes were usually short of salt or oil. At that time, chicken was usually cooked with potato, starch and eggplants as they did not have many vegetables. Afterwards, Chairman Mao named the dish as "Long-March Chicken".
