Shanzhou Zaodan is made of eggs preserved in the distillers’ grains of yellow wine. It is said that a wine producer of
Shaoxing,
Zhejiang Province spread this skill to
Shanzhou in the late Qing Dynasty. The process is strict with materials
and approaches. The yolk is a yellowish red soft paste with a fragrance
of eggs, oil, and wine. It is unique in flavor. The finished eggs should
be stored in a cool place. Before eating, the shells are removed and
some sesame oil is added to make them even more delicious. It is one of
the most famous
West Henan style delicacies.
