Tihuasi
Tihuasi
is a famous dish in Sheqi with a long history. As early as when Sheqi
was a communication hub, tihuasi had been sold in the northern cities
such as,
Beijing and
Luoyang, and to the southern provinces such as
Hunan and
Guangdong. Many rich businessmen and
celebrities buy it for gifts for families and friends. It has enjoyed
great fame. The method to make tihuasi is as follows: Firstly, the bones
of a cooked pig hoof and leg are removed and the meat is minced. Then
some spiced powder and salt are thoroughly mixed together. Then it is
divided into pieces of
1.5kg to
2kg.
It is then wrapped tightly with a filter cloth and put under a weight.
Next the cloth is removed after several hours and the meat is cut with a
sharp knife into slices. Some condiments such as soybean source,
vinegar, garlic sprouts can then be added. But be sure to mix it
thoroughly. Finally you will have a delicious and fragrant famous dish.
