Stewed mutton, acclaimed as “one of the most
unique snacks in Xinxiang”, was created by an elder named Li Wuqing in
1988. All of the following factors, such as the duration and degree of
cooking and the ingredients, need great attention. Some gourmets
summarize that the stewed mutton tastes chewy and crisp and that one
feels fresh after drinking the delicious soup. So it was quickly
introduced into other provinces and into the capital. It became a new
variety of the well-known Henan dish. In 1995, the heyday of the stewed
mutton, an unusual sight that “So many people want to eat the stewed
mutton that the morning market is short of mutton” was rather common in
the Xinxiang and Zhengzhou areas.
