Changyuan deep-fried dough sticks with egg
Du Yongqing lives in the west of
Changyuan
County and comes from a long line of chefs. In 2001, he participated in the “famous snacks competition” in
Henan province.
His deep-fried dough sticks with egg won the competition and was acclaimed as the “most famous snack from
Henan province”. His
North Henan cooking process is like this:
firstly, he drags out a clump of dough with a metal stick in each hand,
and then lengthens it into a long strip. Then he puts it into a pot full
of boiling oil to deep fry the dough, while his assistant stirs the oil
so as to make sure that
the dough is heated in a balanced way. As the dough becomes golden, it is hoisted out from the pot.
