Province, Zenggao (steam cake) is now a
snack with Lingbao flavor. Zeng is an ancient cooker with small holes on
the bottom and can be placed on a boiler to steam foods. It is said
that the zeng originated in the end of the Primitive Society. Pottery
zeng appeared in the New Stone age then developed into bronze ones in
the Shang and Zhou Dynasties, and iron ones later. The best Zenggao is
made with pottery Zeng.
Zenggao uses sticky rice, (traditionally produced in
Wuxi city,
Jiangsu province) and Chinese dates as raw materials, with a proportion of sticky rice of
10 kg and Chinese dates of
3
kg each time. Approaches of making Zenggao are quite demanding in
skills. Looking pleasing in both form and color with a proper hardness
and softness, it is tender, sweet and sticky, and is a good breakfast in
winter and spring.
