Zhang’s Wonton was created by Zhang Xu 150 years
ago. In 1920, Zhang Kun, the second descendant of Zhang’s, improved and
reinvented it. The main materials are wheat flour, chicken, thin egg
pancakes, peeled prawns, thin starch-noodles, and pickles. The minor
materials are oil, pepper, soybean sauce, chicken soup, pork soup and
vinegar. In winter, hotbed leeks and scallions are used; while in
spring, young leeks and Chinese toon are used. Thus, Zhang’s Wonton is
famous for its exquisite craftsmanship and good flavor, in combining
both sour and spicy tastes.
