Xin’an Tangmianjiao (steamed dumpling)


     Xin’an Tangmianjiao has been famous along the Longhai railway (from Lanzhou in Gansu province to Lian Yungang in Jiangsu province) for more than 70 years. The skin of the dumpling is made from refined flour; the stuffing is made from pork, along with some shallots, leeks, cabbage, and ginger. The condiments are sugar, Shaoxing wine, sesame oil, salt, etc. The crescent shaped dumplings are steamed for ten minutes. The finished dumplings have a skin as thin as a piece of paper and look like a jade. They are very delicious and fragrant.
