Mutton Huimo


     Mutton Huimo, literally means, fried pancake in mutton soup. It is a popular food in Kaifeng, which is loved by local folks just as much as they like broad noodles. Mutton Huimo evolved from Beef huimo. The lamb raised in Kaifeng produces tender mutton without a strong smell. Thus they are favored not only by local Muslims, but also by local residents and tourists. It is no wonder that Beef huimo evolved into Mutton huimo. The delicious soup is cooked from lamb bone and pancakes as big as a basin. Mutton huimo combines tasty soup, starched cake and tender mutton; and is not greasy at all.
