Fried Shrimp


   
    It was once a famous dish in the ancient Guide city during the Ming and Qing Dynasties. In the late Qing Dynasty, the elder chef Guan Heqing always treated the ministers to this dish. During the period of the Republic of China, the chefs Chen Sirong and Chen Siming further improved its flavor and variety, and introduced it to ordinary people.
    The main ingredients of the dish are gluten and shrimps. It also contains chicken skin, mushrooms, white fungi, and chicken broth. The shrimp with vegetables is similar in flavor to the dishes of East Henan, which are bright in color and rich in fragrance. Meanwhile, its soup is pure and mellow. Fried shrimp is one of the famous dishes considered to be a local delicacy in Henan.
